The French Connection
These cakes are a category of their own because they are the result of pastry classes I took in France. They are made of several thin layers of different flavors and textures. They are not tall desserts, like their American counterparts, but they are exquisite. Rich in flavor and ingredients, but not overly sweet, these desserts are a delight and go a long way!
Forêt Noire (Black Forest Cake)
Made with raspberries instead of the traditional cherries, this cake is a combination of 3 chocolate sponge cake layers, one raspberry layer, and two layers of whip cream mixed with mascarpone cream, one vanilla and one chocolate. Although rich because of the cream, it remains a light cake! Raspberries add a beautiful tartness. 7 inch - $36 (serves 8)
Opéra (Opera Cake)
This classic Opera Cake is made of 2 thin layers of almond cake, also known as a joconde, or sponge cake, each soaked with a coffee syrup. The cake layers alternate with a layer of coffee buttercream and a layer of chocolate ganache. The top layer is a chocolate glaze. In addition to looking beautiful, the cake is rich, flavorful and a delightful taste of France. Gluten-free also available.

Flourless Chocolate Cake (gluten-free)
From the baker who forgot to add flour to the mix to the overworked sous-chef mistaking the cocoa powder for flour, this sumptuous and rich cake has many legends behind its creation. This French version of the flourless chocolate cake has a dense and almost creamy interior and a decorative powdered sugar topping. Served on its own or dressed up with whipped cream, fresh fruit, or ice cream, the cake is a delight for the eyes and the palate! With ganache, add $4.00.
Lemon-Frosted Pistachio Cake
Fantastically moist, this cake is adapted from Nigel Slater, a well-known British cookbook author. It is rich with ground pistachios and almonds and is topped with a simple lemon glaze and chopped pistachios. This elegant cake is perfect for a dinner party. Gluten-free also available.
Rich Chocolate Cake (gluten-free, dairy-free)
Made with dark chocolate, almond flour, and eggs, this cake is perfect if you need a gluten-free and dairy-free option. So good that it will please anyone who loves chocolate. Serve on its own, with fresh fruit or with whatever you like to serve with chocolate cake.
St. James Almond Cake (gluten-free, dairy-free)
This cake is a specialty in Spain where it is known as a Tarta de Santiago and named after St. James, the patron saint of Spain, and the beautiful town of Santiago de Compostela where the cake is especially popular. A variation of the French Almond Cake, this cake is equally rich and moist, but with a hint lemon and a dusting of powdered sugar.

A cookie made from three delicious elements: French vanilla sablé (French butter cookie), a spoonful of raspberry jam in the center, and a circle of streusel around the jam. This is a variation of the beautiful cookie that Dorie Greenspan dreamt up while in Paris. And it tastes fabulous!
Madeleines ($12 dozen)
From the Lorraine region in northeastern France, these traditional small sponge cakes with a distinctive shell-like shape are tender and moist. They are not overly sweet, but not plain either. A lovely little cake, perfect with a cup of tea or coffee. Available flavors: lemon, vanilla, or chocolate chip.
